Can’t Decide on a Vegetable? MIX IT UP!

Feeling indecisive about what vegetable to choose to go with that chicken breast you are about to throw on the grill? Perhaps this side can help. I’ve made this side primarily in a skillet on the stove, but after trying it on the grill, I enjoy the crisp crunch that a grill allows compared to a sautéed version. Now, I do not know if it is known elsewhere by a different name, but for me, I call it rivs go to side. It can be served with other sides or it is so good it could be the side all on its own. It will consist of squash, zucchini, an onion and corn. For those I have prepared this dish for, there was no such thing as too much.

Veggie Foil Packs BBQ

Select as many of the above mentioned vegetables as you wish but keep in mind, one onion should be substantial for a 6-8 person serving, prep vegetables as usual then dice.

Next, acquire tin foil, and cut into 6 inch squares (if serving with a second side) or 8 inch squares (if this will be your only side, with perhaps a roll).

You can use either canned corn or frozen corn, I prefer frozen as it is not as soggy and it will essentially be steamed so it will soften up already.

For a softer serve, throw in a tbsp. of butter, then add vegetables to the center of the foil squares as you see fit, some like more squash, others prefer more corn, find the amount to satisfy your wants.

Finally, place on the grill at 350 degrees for 15-20 minutes depending on the firmness you would like, then remove and season as you please. A little salt and pepper go a long way. Don’t forget to grease the foil.
