Depression cooking took place long before the Great Depression. Families from the Old World learned to take a few ingredients they could scrounge up, grow, barter or trade, and make wonderfully tasty meals with a lot of effort, love and time.

God Bless my Grandma for sharing some of her Secret recipes with me. (As many of you know, it is very difficult to get Recipes outta the Old World Cooks. They want to be known and remembered for their great creations!).

Cooking back then took a lot of time. Most families had a farm or father who labored and a mom who tended to the house, housework and cooking all day. Nowadays, we don’t really have the luxury of time with our busy schedules, so we adapt.

Here is an Old Polish Family Recipe modernized for Today’s Family. It has been Smokified!

 

Cabbage Casserole (Deconstructed Stuffed Cabbage) Recipe: BBQ Fusion

Simple, easy, Unstuffed Cabbage (ala Golumpki (Gołąbki) Recipe

 Typically, the ingredients of this Recipe get rolled into the Cabbage by hand, like a little Gift (other Cultures do the same, as with Tamales or Eggrolls,etc.). Then you slice into it. But you can get that same great taste in a simple one pot meal.

Ingredients

    • 1 lb ground Turkey or lean Beef
    • 1 cup Onion – diced
    • 2 cloves Garlic – fine dice
    • 1 med head Cabbage – Quartered, decored and cut to 1″ squares
    • 1 tbs Brown Sugar
    • 3/4 tsp Salt
    • 1/4 tsp Cayenne Pepper
    • 1 tbs Worcestershire
    • 1 Bay leaf
    • 3 Tbs Butter
    • 1/4 cup Water
    • 1 tsp Better than Boullion Chicken (reduced sodium)
    • 4 oz can diced Tomato
    • (For Rice)
    • 1 cup uncooked Rice
    • 1 3/4 cups Water

Instructions

    1. Saute ground Meat and Onion in oil until brown. Add Garlic for 1 minute. Add 1/4 cup Water, Worcestershire, Bay leaf, Better than Boullion and stir. Add Cabbage. Add Brown Sugar, Cayenne and Salt to top of Cabbage and Cover. Leave to simmer on low heat stovetop for 15-20 minutes. (Cabbage will steam and release its juices). Uncover, stir and create a hole in the center of your pan. Add rice to center and 1 3/4 cup of water. Do not stir. Cover and continue to cook another 20-25 minutes. Stir, spoon dice Tomatoes around top of mixture, add Butter. Turn off heat and let stand 5 minutes. Season to taste.golumpke

Notes

  • TIP: Traditionalists can add Tomato Juice or Soup to cover mixture upon serving. My Grandma used to say “The more Butter, the Better!”

Preferred Method: Buy several 1 lb logs of ground Meat and Smoke with your favorite hardwood. Freeze until needed for many Recipes, including this one! Just thaw and saute, as specified. You will get an old world Smokey flavor in your Traditional meal. Enjoy!
