Creamy delicious chicken breasts, packed with the right spices will definitely make you want to smother your mouth with this delicacy.

Chicken breast (boneless) -850gm

First Marination

  • Lemon juice-2 tsp
  • Salt-to taste
  • Ginger garlic paste-1 tbsp

Second Marination

  • Processed cheese-1/4th of a cup
  • Egg white-1 nos
  • Ginger garlic paste-2 tbsp
  • Green chilli paste (or sauce)- 1 tbsp
  • Cashewnut paste- 3 tbsp
  • Cream-1 cup
  • Cornflour-2 tsp
  • Cardamom powder-½ tsp
  • Nutmeg powder- ½ tsp
  • White pepper powder-½ tsp
  • Cumin seeds-1 tbsp
  • Salt-to taste
  • Refined oil-optional (if you choose roasting)
  • Melted butter-for basting

  1. Clean and wash the chicken breasts and cut them in small pieces as you desire. Make sure that you pat dry the chicken with a muslin cloth.
  2. For the first marination, you need to mix together the lemon juice, ginger garlic paste and salt and rub it over the chicken, evenly.
  3. Keep aside for almost 1 hour for best results.
  4. After a whole hour, prepare the marinated chicken for the second marination. For this, you must remove the extra moisture from the chicken.
  5. Take a moderately large and deep tray, put in the grated cheese and the cream. Mix these two together with your palm and further add the rest of the ingredients under the Second Marination category.
  6. Mix in the chicken pieces with the marinade, rub well and evenly and keep aside for 2 whole hours, at the least.
  7. After 2 hours, you will notice the marinade is completely absorbed by the chicken.
  8. Take a skewer, skew the marinated chicken pieces and keep a tray underneath to collect all the drippings (these drippings are more than enough to start a waterfall in your mouth!).
  9. You could either roast the chicken in a hot pan with refined oil, or you could barbecue it over a charcoal grill for 5-7 minutes. Whichever way you do it, it’s going to turn really tasty.
  10. Remove and hang the skewer to let the excess moisture drip out entirely and baste with melted butter.
  11. Transfer the chicken to a serving plate and serve it with a salad and chutney.
