With its long, warm sunny days, summer may be the most popular grilling season.  But, don’t count out fall grilling.   When temperatures become cooler and potted mums replace hanging baskets of geraniums, the last of the summer tomatoes yet to lose their green hue make their way into kitchens.  Usually reserved for classic fried green tomatoes, grilled green tomatoes make a delicious side dish– tart but smoky, tender, but not falling apart.  Serve alongside your favorite barbeque chicken or grilled steak or salmon.

Grilled Green Tomatoes with Charred Scallion Mayonnaise

For the Grilled Green Tomatoes

Ingredients

  • 3 pounds green tomatoes (about 3-4 large tomatoes), cut into ½” thick slices
  • Vegetable oil for brushing tomatoes and grill
  • Salt and freshly ground black pepper

For the Charred Scallion Mayonnaise

Ingredients

  • ½ cup mayonnaise (can substitute plant based mayonnaise)
  • 5 large scallions, roots and 2 inches of dark green ends trimmed
  • 1 T cider vinegar
  • 1/8 tsp sugar
  • Vegetable oil for brushing
  • Salt and freshly ground black pepper

Method

Light a gas or charcoal grill to medium-high and brush with oil.  Brush both sides of tomato slices with oil and season with salt and pepper.  Grill tomatoes 3-4 minutes per side or until light charred and tender.  While the tomatoes are grilling, brush the scallions with oil and season with salt and pepper.  Grill 2-3 minutes per side until lightly charred.  Place mayonnaise into a small bowl.  Finely chop scallions and add to mayonnaise along with cider vinegar.  Season to taste with salt and pepper.  Place tomatoes on serving platter and serve with Charred Scallion. Mayonnaise.  Serve  tomatoes hot or slightly warm.
