Breakfast Recipes for the Grill

The Griddle

A good quality griddle is essential for morning barbecue breakfasts. Make sure it is a good solid piece of metal. It should ideally cover about 70% of your grill surface. It is also wise to look at one that can hold fat. If the fat on a griddle pan overflows into the fire, it will cause flare-ups from the coals. A lot of griddle pans are reversible which will give you various surface options.

We all associate eggs with breakfast. Of course, eggs can be fried on a griddle with a little oil but there are a few other options which will make the eggs a little more interesting.

Muffin Tin Method:-Spray the inside of the cups of a muffin pan with a little oil. Crack an egg into each cup. Place the muffin pan on the grill.

Aluminum Foil Method:- Using heavy-duty aluminum foil make small round trays to hold the egg. After coating with oil crack an egg into each tray. Cook over medium coals.

Peppers with Eggs:- Partly cook large peppers sliced in half on the grill. They should grill until soft but still hold their shape. Crack an egg into the peppers and leave on a medium heat on top of the grill until the eggs cook through.

Ring the changes, use a large Portabello mushroom as the base.

Whole eggs in the shell:- Pop the whole raw egg still in its shell on top of the grid. Cook for about four minutes before turning the egg over for a further four minutes. Simple!

Serve bacon simply grilled over medium coals on the barbecue grate. You can make use of a griddle pan, then the excess bacon fat will drip down to the base of the griddle leaving a healthier bacon treat.

Even consider placing bacon strips in a greased muffin pan. This should form a bacon “nest”. Crack an egg into the nest and place the muffin pan on the grill. Serve once cooked.

When grilling your bacon brush with maple syrup for that candied effect.

Breakfast Sausages

Apart from grilling your favorite whole sausage from your local butchery consider creating your own breakfast sausage patties.
