There are very few people who don’t enjoy Avocado. This superfood is relished around the world and used in a wide range of recipes. The avocado was once limited to dips and salads but today it is being used in a wide variety of dishes from breakfasts through to evening puds.

The largest consumers of avocados are in the United States. Since 1985 the total amount of Avocados consumed has risen 6 fold with figures for 2018 topping 2.4 billion pounds of fruit! Europe will match this growth within 8 years.

There are in fact many types of avocado’s throughout the world. Normally pear-shaped but sometimes round the avocado is classed as a fruit. There is even a cocktail version now available which is the size of a small gherkin.

The most commonly consumed is the Hass type but also popular are Bacon, Fuerte, Gwen, and Pinkerton.

A perfect avo will have a silky smooth texture with a rich nutty flavor.

Why is it called a Superfood?

  • It contains good monounsaturated fats. This is essential in a healthy diet.
  • It has a high concentration of dietary fiber.
  • The avo includes high levels of minerals, vitamins antioxidants, and phytochemicals (Disease preventative qualities).
  • Avos are naturally sugar, cholesterol, and sodium-free.
  • They are recommended in weight loss programs. A typical ½ avo contains 160 calories. This is 20 calories less than a small bag of peanuts and a little lower than a small slice of cheddar cheese. Avo is an excellent substitute for fat in most dishes.

As previously mentioned, we can eat avos throughout the day, replacing and complimenting dishes from Breakfast to Dinner. Have a look at a few of the recipes below :

AVOCADO BREAKFAST

Method

Preheat your oven to 425 degrees F.

Crack the eggs into a bowl. Make sure that the yolks stay intact.

Cut the avocado in half remove the pip and place in a baking dish. Support the edges to keep them upright.

Spoon the egg yolk into the hole of the avocado. Then spoon in the egg white until the hole is full. Season.

Place the dish with the avocado into the oven and bake until it cooks the eggs. This is normally about 15 minutes.

Sprinkle crisp bacon pieces over the avocado just before serving. Enjoy the contrast between the creamy avocado and the soft poached egg!

MIDDAY AVOCADO SNACK

Avocado, Coconut and Ginger Smoothie- Superfood to Keep you Going

Ingredients
  • ½ avocado
  • A ¾ cup of full-fat coconut milk
  • ¼ cup almond milk
  • 11/2 tsp finely grated fresh ginger
  • 1 tsp lemon or lime juice
  • 1 cup crushed ice (This will make the smoothie thicker)
  • Sugar-free sweetener to your taste.
Method

Add all the ingredients except for the ice to a blender and blend on low speed until smooth.

Add the crushed ice and blend on high. If needed add a little sweetener and blend further.

Notes: This should make two smoothies.

Remember that you can freeze avocado chunks and then blend when required.

AVOCADO LUNCH

Avocado and Beet Sandwich – Superfood Power Lunch

Ingredients
  • 2 slices  of dark rye bread
  • ½ avocado pip removed and peeled
  • 2 tablespoons of cream cheese (smooth)
  • 2  tablespoons grated pickled beetroot
Method

Spread the cream cheese on  the slices of bread

Next, add the pickled beetroot on top of one slice.

Thinly slice the avo and place on top of the beetroot.

Season to taste and place the other slice of bread on top to create the sandwich.

The creamy avo combines so well with the sharpness of the beetroot. A healthy sandwich – quick and easy to make.

AVOCADO INSPIRED SUPERFOOD DINNER 

Avo vodka and cucumber chilled soup

Cool and velvety smooth ……

Ingredients
  • 6 Ripe avocados peeled pip removed and cut into chunks.
  • 2 English cucumbers peeled and chopped
  • 1 small onion peeled and chopped
  • 2 stalks of Celery chopped
  • 2 Teaspoons of quality salt i.e. Maldon
  • 2 Teaspoons fresh parsley
  • 2 teaspoons Green Tabasco
  • 1/3 rd cup Vodka
  • 1 cup Greek Yogurt
Method

Blend all the ingredients until smooth.

Pour through a fine sieve.

Let it cool in the fridge

Serve the soup chilled. Garnish with finely chopped chives.

Avocado Risotto

The creamy avocado mixed in with risotto is delectable! The addition of mild cheese rounds off the flavor.

Ingredients
  • 1 Medium-sized Onion diced
  • 1 Tablespoon Butter. (Can substitute 1 Tablespoon of Olive Oil)
  • 2 teaspoons Crushed Garlic
  • 1 cup Arborio Rice (VIP use a good quality arborio it makes all the difference)
  • 150 ml Vegetable stock
  • 4 cups,3 Tablespoons,2 Teaspoons Hot water
  • 2 Avocados peeled and pitted
  • 1 Tablespoon Lime juice
  • ½ cup grated  Gouda Cheese
  • 2 Tablespoons Fresh Parsley Chopped
  • Salt and Pepper to taste
Method

Heat the oil in a large frying pan or wok. Cook the onion and garlic over medium heat for 5 minutes until soft.

Add the rice and cook for a further 2 minutes.

Add the vegetable stock to the pan 150 ml at a time. Let it simmer carefully stirring occasionally until it has absorbed the liquid. Add a further portion of the stock.

Continue adding stock slowly until the stock is no longer absorbed by the rice. The risotto should be still moist. Taste to ensure it is to your taste. Serve the risotto al dente. (Fully cooked but still slightly firm to the bite )

In a separate bowl coarsely mash the avo with the lime juice, salt, and pepper.

When the rice is cooked add the mashed avo the cheese and chopped parsley. Gently mix in.

Serve immediately.

AVOCADO DESSERT PUDDING

Finally, using avo (which is a fruit after all) in a luscious chocolate pudding to round off your meal.

Avocado chocolate pudding

This is a quick and easy decadent chocolate pudding. It is vegan, gluten-free and sweetened without refined sugars. The perfect end to an Avo Meal!

Ingredients
  • 3 medium-sized avocado peeled and pitted
  • 1 cup natural unsweetened cocoa powder
  • 1 Cup Maple Syrup
  • ! Tablespoon vanilla bean paste
  • 1 cup of full-fat canned coconut milk
  • A pinch of salt
Method

Place all the ingredients in a blender. Initially blend on the pulse as the mixture is thick then finish on a high blend until the ingredients are smooth and mixed. If need be, add a little more coconut milk.

This pudding will thicken on refrigerating.

Serve with a few raspberries to decorate or dark chocolate flakes.
