Food bloggers are going above and beyond to innovate with the ever popular avocado toast.  From interesting recipes to stunning Instagram photos that will make anyone hungry, this craze isn’t going away anytime soon.

It’s easy to get creative and make something delicious by simply combining a few ingredients. Whether you’re having a late-night snack or trying to impress friends for Sunday brunch, these variations on the classic are sure to hit their mark.

1. Add a layer under the avocado

Make your toast extra decadent, rich, and creamy by layering something extra underneath the avocado.  Go simple with plain cream cheese, mayonnaise, and butter or get a little fancier with garlic aioli, sour cream, and hummus or baba ganoush.  By giving the toast a little boost it goes from appetizer or snack to a meal in itself.  Plus the cool spread will contrast with the earthiness of the avocado, creating a depth of flavor and texture.

2. Top it with simple seasonings

Depending on the ingredients underneath, you can mix and match to get the perfect balance of sweet, salty, or spicy.  Try sprinkling sesame seeds, nori flakes, or the ever popular everything bagel blend.  Other options include your favorite seeds (sunflower, pumpkin, flax, hemp) or even fresh herbs like cilantro, rosemary, parsley, thyme, basil, chives, or dill.  Get inspired by the toppings and work back from there to construct the rest of the toast.

3. Add meat to make it a meal

Balance out the richness of avocado with the tang of barbeque like pulled pork, sloppy joes or shredded chicken.  Use leftovers like fried chicken, pork roast, meatloaf, and even cold cuts to create a protein-rich stacked snack.  Day-old takeout bulgogi or kung pao chicken could also be used, as well as cold salads like tuna and chicken.  Smoked salmon lovers can reinvent the lox bagel a la avocado while those who prefer bacon or even anchovies can customize it to their tastes.

4. Top it off with an egg

One of the most popular ways to create a fancy avocado toast is to add an egg.  However, one egg on top of a bit of avocado just isn’t enough.  Instead, start with avocado and then start layering by adding your choice of meats and vegetables.  Finally, add an egg (or two) on top and garnish with microgreens or fresh herbs.  Make it a soft-boiled or sunny-side-up egg so the yolk will run out when it is sliced open.  Don’t forget to season the eggs with some cracked pepper, salt, paprika or something even spicier like chili powder, cayenne, or hot sauce.

5. Make sure to eat your veggies

Avocado toast is a great way to get some extra vegetables in your diet, including those which might not be easy to eat on their own.  Dress up your toast by adding in roasted sweet potatoes, peppery arugula, sauteed mushrooms, blanched spinach, asparagus, or a ripe and juicy beefsteak tomato.  Onions can be added in either caramelized or raw for a bit of crunch while pickled onions contribute a bit of tanginess.  Other unexpected vegetables like corn, fresh peas, thinly sliced radish, artichokes, and capers are sure to wow anyone.
