It serves as a proving ground for greatness. One can’t simply walk up to the judges and hand them a dish that wasn’t […]

Comfort Food Review: Estelle’s Southern Cuisine – Laurel, MS

Comfort Food Review: Estelle’s Southern Cuisine – Laurel, MS

There are two reasons this location is included in my review of great barbecue restaurants. First, the ribs are excellent and the offerings are buffet style, so it’s all you can eat. And second, the sides and peripherals are so varied and delicious that its’s worth going just to make a meal out of the veggies.

BBQ Review: Stonewall Barbecue – Oakgrove, MS

BBQ Review: Stonewall Barbecue – Oakgrove, MS

The star of the plate was the smoked chicken. Wow, it was a perfectly smoked bird. The chicken was tender, moist, and delicious. I was a little saddened when I had exhausted all that was in my meal, and again, it was a full leg quarter. The rub added a good crisp to the meat’s juicy, succulent texture.

BBQ Review: Dickey’s – Laurel, Mississippi

BBQ Review: Dickey’s – Laurel, Mississippi

For a chain restaurant, Dickey’s does a pretty good job of keeping it real. Real barbecue. Walking in, you’re greeted with the savory smells of smoke. There’s the first test passed. I felt the menu from which to order was in a slightly incoherent order, but that has nothing to do with the food.

It’s the Wood that Makes it Good

As any seasoned smoking aficionado will tell you, not all woods are created equal. Sure, they all burn. Sure, they all add flavor. But they don’t all burn at the same rate and they don’t all add the same flavor. There’s even additional factors like cu

It’s all about The Rub: BBQ Rub Review

By Pitmaster Samuel Klusmeyer     Slow cooking is an honored tradition of food preparation. There’s something in the process. Heating your cooking surfaces to the perfect temperature, preparing your ingredients, coating your choice meat with a rub that’s just waiting to crust… oh so deliciously, and then basting again and again while the hours […]
